Christmas is just around the corner, bringing with it the traditional slew of seasonal celebrations and festivities. For any entertainer, the festive season can be a daunting prospect, with many mouths to feed and plenty of guests to impress.

Pancakes with chocolate orange sauce

Get the day off to a great start



·      1 bar (100g) Lindt Excellence Orange Intense Dark Chocolate

·      1/2 cup (125mL) 35% cooking cream

·      1 tbsp pure maple syrup (or golden syrup)


·      2 cups (250g) unbleached all-purpose flour

·      2 tsp baking powder

·      1 pinch fine salt

·      2 large eggs

·      1/4 cup (50g) sugar

·      1/2 tsp pure vanilla extract

·      1 3/4 cup (440mL) milk

·      Vegetable oil, for cooking

·      Orange slices (for garnish)




1.   Put chocolate in a bowl and set aside. In a small saucepan over low heat, heat cream and maple syrup. When mixture is hot, pour over chocolate. Using a whisk, mix until sauce is blended. Reserve at room temperature for pancakes. (Makes about one cup. Sauce can be prepared in advance and stored in a sealed glass jar for 4 days in a refrigerator. Warm to serve.)


1.   In a large bowl, combine flour, baking powder and salt. Set aside.

2.   In another bowl, whisk eggs with sugar, vanilla and milk. Gradually add liquid ingredients to dry ingredients, mixing until a homogeneous paste is obtained. Leave dough to rest for about 10 minutes at room temperature.

3.   Heat a non-stick skillet over medium heat. Lightly oil the pan. When the pan is hot, pour about 1/3 cup (80mL) of dough into centre of pan and cook each pancake 1 to 2 minutes on each side, or until golden brown.

4.   Serve pancakes with chocolate sauce and garnish with orange slices

Lindt Chocolate Mousse

A sweet and festive finale


·      3 bars (100 g each) Lindt Excellence 70% Dark Chocolate, chopped

·      1 tbsp (15 mL) butter

·      2 tbsp (30 mL) hot water

·      1 tbsp (15 mL) orange liqueur (optional)

·      2 cups (500 mL) 35% whipping cream

·      4 egg yolks

·      1/4 cup (60 mL) granulated sugar

·      Mint leaves


1.   In double boiler over medium-low heat, combine chocolate and butter, stirring until chocolate has melted and mixture is smooth. Stir in hot water and orange liqueur (if using). Set aside.

2.   Whip cream just until stiff peaks form. Set aside.

3.   In large bowl, beat egg yolks and sugar until pale and thickened. Add chocolate mixture, stirring just until combined. Using a spatula, fold in whipped cream.

4.   Transfer to serving bowl or divide into individual cups. Cover mixture with plastic wrap; refrigerate for 6 hours or overnight. Before serving, garnish with more whipped cream, shaved chocolate and, if desired, mint leaves.
